Our dry-aged fish is custom-made to order. Space in our dry-aging chamber is limited, so a finished product may not be available for immediate shipment. Your order may need to wait for chamber space and then complete its aging period before it is ready to ship. The stated aging period does not include any wait for chamber space or shipping transit time.

Please contact us before ordering for a specific event or delivery date so we can confirm the current estimated preparation and dispatch timeline. Overnight shipping refers to transit after your order is ready; it does not mean the product will be ready to ship the next day.

Dry-Aged Ora King Salmon from New Zealand

Farm-raised New Zealand king salmon, aged in a controlled environment for a rich flavor and a firm texture suited to portioning and cooking. Supplied fresh, never frozen, and shipped overnight with gel ice.

Choose Your Aging Option

  • 7 days: approximately 10 lb format.
  • 14 days: approximately 10 lb format with a longer aging period.
  • 10-day Golden Ora: a separate 45–50 lb fish option for larger orders. Confirm availability and the supplied preparation before ordering.

Use the product selector for current prices and available options. Confirm the cut, head and gut removal, and expected usable yield for your selected format; the smaller formats and Golden Ora should not be treated as identical packages.

Special-Order Timing

Allow the selected 7-, 14- or 10-day aging period before shipment. For an event, confirm the dispatch date and delivery schedule before placing your order.

Preparing Your Salmon

Keep the fish chilled until preparation. Portion the fish for your chosen method, pat dry and check for bones. Pan-sear, roast or grill portions, adjusting the method to their thickness. For a large fish, plan the cutting and portioning before cooking.

For fully cooked salmon, measure 145°F (63°C) in the thickest part. Fixed minutes per side do not establish doneness for every cut. Dry aging alone does not establish suitability for sashimi or crudo; confirm product-specific intended use and handling instructions before considering raw preparation.

Serve with roasted vegetables, potatoes or rice and a lemon-herb sauce.

Storage After Delivery

Refrigerate promptly on arrival and follow the package’s storage and use-by instructions. The supplier’s aging period is not additional storage time at home. Do not continue aging this fish in a household refrigerator. Follow the product’s freezing and thawing directions if you will not prepare it within its storage window.
